So seeing as I did not find the time to type up week 7′s blog I’m turning week 7 and 8 into a combo blog! Yay for procrastinaition!
Anyways, in the last two weeks I have officially completed the three recipes from the Goodness Gracious cookbook! *victory cheer* The two recipes were Sunshine for Your Soul Veggies and Vegetable Medley Stir-Fry. (For the record, I am not and will never be a vegetarian, I just happened to make two veggie based recipes in the last two weeks. No disrespect to the vegetarians/vegans out there but bacon and steak are my friends and I love them with all of my heart. Just wanted to clear that up).
The Sunshine for Your Soul Veggies were wonderful, I mean how could they not be? Doesn’t the name just make you smile? Essentially, these were roasted potatoes, peppers, onions, and mushrooms. They went extremely well with the egg bake my mom made for the main course.
The Vegetable Medley Stir-Fry was a “symphony” of flavors but was an odd combination of veggies for a stir-fry. I’ve never had a stir-fry with cauliflower or zucchini in it until last Saturday but it was surprisingly a nice combination. I added some shrimp to the mix and we had a delicious dinner Saturday night.
These were my last recipes from Goodness Gracious, as I’ve already mentioned, and I’d like to say a few words about it. This cookbook is filled with a lot of hearty comfort foods that will make anyone happy ( My brother, aka the pickiest eater I know, actually ate the zucchini in the stir-fry!). The average cook would find most of the recipes easy to handle and the recipes don’t really call for any extravagant ingredients that are hard to get a hold off. Overall I’d recommend this cookbook for people that enjoy simple heartwarming food.
